Healthy Energy Balls Recipe with Dates

A simple, no-bake, super yummy and healthy snack, these energy balls are naturally sweetened with dates and maple syrup and loaded with toasted rolled oats and shredded coconut.

Ingredients
  

  • 1 cup pitted dates packed slightly
  • 2 tbsp pure maple syrup
  • 1 tsp coconut oil solid or liquid
  • 1 tsp vanilla
  • pinch of kosher salt
  • 1/2 cup unsweetened shredded coconut toasted
  • 1/2 cup large rolled oats toasted

Instructions
 

  • Preheat oven to 350 degrees. On a baking sheet combine and spread out shredded coconut and rolled oats. Toast for 10 minutes until golden and fragrant.
  • Meanwhile, in a food processor, add pitted dates, maple syrup, coconut oil, vanilla, and a pinch of kosher salt. Pulse until semi-liquid and paste-like, with bits of dates still intact.
  • Add in the toasted coconut and oats and pulse until well combined. The mixture will not be smooth. We're looking for texture, lots of sticky, tasty texture.
  • Using a small cookie scoop (a spoon or your hands will work too) make the balls, give them a squeeze, then roll the balls between your palms until smooth and round. *Adding a tiny bit of coconut oil to your hands before rolling will prevent them from sticking to you.

Notes

When using pitted dates I always give each one a quick little squeeze to ensure the pit has been removed. Every once in a while I will come across a pit and you do not want to wreck your food processor blade (or eat a pit).
