Loaded Sesame Ginger Spinach Salad

Ingredients
  

  • 4 cups baby spinach washed
  • 1 ripe avocado chopped into bites
  • 1 carrot peeled and shredded
  • 1 green onion chopped
  • 1 roasted chicken breast or protein of your choosing -- *optional
  • sesame seeds to garnish -- I use both white and black

Dressing:

  • 1 tbsp rice wine vinegar
  • 2 tbsp sesame
  • 1/2 tsp fresh minced ginger
  • 1 tsp tamari
  • 1 tsp honey
  • pinch of kosher salt

Instructions
 

  • Toss salad ingredients together in a large salad bowl.
  • In a small bowl or mason jar, combine dressing ingredients and whisk/shake until well combined. Drizzle over salad, and enjoy.
