Chocolate Chip Bran Muffins

healthy sub: whole wheat flour

baking powder

vegetable oil
healthy sub: avocado oil

pure maple syrup
or brown sugar or liquid honey

semi-sweet chocolate chips
Instructions
Preheat oven to 400 degrees.
In a large mixing bowl, combine wheat bran, flour, baking powder, baking soda, and salt.
In a medium mixing bowl, beat the egg with the oil. Then whisk in maple syrup, molasses, milk, and vanilla.
Pour the egg mixture into the dry ingredients and stir until well combined.
Stir in chocolate chips.
Spoon the mixture into parchment-lined (or greased) muffin tins.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Notes
Chopped-up dates or raisins make a great substitute for chocolate chips.
