Chocolate Chip Bran Muffins

These wholesome chocolate chip bran muffins are made with wheat bran, flour, maple syrup, molasses, egg, vanilla, vegetable oil, milk, and chocolate chips. Perfect for mornings on the go and easy afternoon snack time.

Ingredients
  

  • 1 1/2 cups wheat bran
  • 1 cup all-purpose flour healthy sub: whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1/3 cup vegetable oil healthy sub: avocado oil
  • 1/3 cup pure maple syrup or brown sugar or liquid honey
  • 3 tbsp molasses
  • 1 cup milk
  • 2 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 400 degrees.
  • In a large mixing bowl, combine wheat bran, flour, baking powder, baking soda, and salt.
  • In a medium mixing bowl, beat the egg with the oil. Then whisk in maple syrup, molasses, milk, and vanilla.
  • Pour the egg mixture into the dry ingredients and stir until well combined.
  • Stir in chocolate chips.
  • Spoon the mixture into parchment-lined (or greased) muffin tins.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Chopped-up dates or raisins make a great substitute for chocolate chips.
