Coconut and Sweet Potato Soup

This coconut and sweet potato soup is so flavourful and delicious. It's made with coconut milk, sweet potatoes, ginger, garlic, and onion, all blended until smooth and creamy.

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium yellow onion chopped
  • 2 large garlic cloves minced
  • 1 tbsp fresh gingeroot minced
  • 4 cups sweet potato peeled and cut into small cubes
  • 1/2 tsp ground turmeric
  • 1/2 tsp pink Himalayan sea salt
  • 900 ml vegetable broth 1 carton
  • 400 ml coconut milk 1 can

Instructions
 

  • In a large stove top pot, heat olive oil over medium-high.
  • Toss in chopped onion and garlic. Cook for 3-5 minutes (stirring occasionally).
  • Add in ginger, sweet potato cubes, salt, and turmeric. Stir to coat.
  • Pour in vegetable broth and coconut milk and bring to a gentle boil. Let boil for 15-20 minutes, or until the potatoes are tender.
  • Use a hand-held immersion blender to puree the soup. Make it completely smooth or leave some sweet potato cubes intact for more texture.
