  • 1/2 cup grated carrot ~ 1 medium sized carrot
  • 1/4 cup roasted cashews roughly chopped (unsalted)
  • 1/4 cup fresh cilantro roughly chopped
  • 1 tbsp olive oil
  • pinch of kosher salt

Dressing

  • 2 tbsp Tahini
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp olive oil
  • 2-3 tbsp cold water
  • pinch of kosher salt
  • pinch of freshly ground pepper
